Our new Mexican single origin is from the Yajalon community in the Chiapas region of Mexico! It's a combination of 5 cultivars, washed process, and super brown sugary sweet! After undergoing 12-20 hours of dry fermentation and 2 weeks drying on raised beds, this coffee made its journey north. It has sweet aromas of honey, cream, caramel, and comes to us from a group of small farm producers based in Yajalon. We are excited to showcase this jammy, certified organic coffee from our neighbors to the south! This is our first offering from Red Fox Coffee Merchants, an incredible company with values for sustained quality, relationship, and equity in the supply chain.
