Tasting Notes: Honey, Pecan, Cherry

Welcome spring with our first coffee from Mexico as a single origin! This coffee is a blend of five cultivars, has sweet aromas of honey, cream, caramel, and comes to us from a group of small farm producers. We are excited to showcase this jammy, certified organic coffee from our neighbors to the south! We purchased this coffee through our relationship with Red Fox importers!

Mexico Chiapas, Yajalon, Washed

• Process: Fermented 12-20 hours, dried 10-15 days on petate mats
• Altitude: 1350-1750 meters
• Grower: Many producers organized around Yajalon lot  
• Variety: Bourbon, Typica, Oro Azteca, Maselessa, Maragogype
