Hand-picked at the ripest possible stage, this fruit is left in air-tight GrainPro bags for 24 hours in a cool shaded container. The cherries get floated to rid them of debris, drop the temperature, and lower microbial count. They get placed on raised beds for 26-28 days (depending on climate) and are constantly stirred to ensure even drying. Antonio and his wife meticulously sort out the beans every harvest to ensure uniformity and highest quality.

Antonio is also interested in developing his agronomic practices. He wishes to provide support to other producers in the region who cannot afford their own supplies, and wants to help make them more accessible and affordable for producers.
