Every time we buy coffee from Luis Jose Valdez’ farm, La Cristalina in Colombia, we’re in for a treat! The farm cultivates 142,000 coffee trees and incorporates restorative biodiverse practices throughout the year. Ally Coffee, our importing partner in sourcing these coffees, says the coffee cultivation complements a system of regulated shade with tree species, including walnut, red cedar, and guava, which create habitats for many species of birds. Finca La Cristalina plants black cedar, a tree at risk for extinction, from its own nursery in the coffee fields. The forests on the farms are source of natural richness, creating habitats for many birds and animals.
This year we tried several of the lots from finca la cristalina, the natural process bourbon lot blew us away with its pleasant texture, aroma, and flavor. Luis’ coffees are always sweet and balanced, this one stood out with vibrant cherry and raspberry flavors, floral aroma and honey sweetness. The natural process method of fermentation with this lot brings out a delicious red sangria, not overpowering, but adding complexity and texture to the sweetness from beginning to end. This is our sixth season buying from finca la cristalina, we can’t wait to come back to these coffees next year!
